I'm at 80% on my lays and am pretty confident on my streaks so tend to set an amount I want to make per race.
To RATE my 'ability', I use LSP against BFSP (even if I have bet and traded / gotten on for less, etc).
I'm also taking on an approach starting next week for horses: I'll be targeting to make "X" amount per track on a day. This will be in combination with lays/trades/backs, etc. So the more I play on a particular track, the less I target per race.
