You could but you would have to adjust it for one-off events, e.g kick off/punt returns for touchdowns the sort of stuff that happens once or twice a season to a team but materially effects the spread.
Also take the Houston - Washington game you would have to keep in mind Washington lost their QB to injury partway through the game.
