Richard Guest did it in the 2003 Grand National. He trained 2 in the race (Red Striker and Red Ark), but rode Chives for Henrietta Knight. Chives was only 10/1, and the 2 he trained were 50/1 and 100/1, but they both got further than Chives did. None of them completed.
He was intending to do similar the following year, with 2 entered for the race, and he took his licence out to ride one of them, but was banned from doing so after complaints (including from the ROA) following his exploits the previous year. The Jockey Club said their rules had been unclear, and that they would update them. In the end, neither ran. I can't remember why, maybe he sulked and took them out. And I don't know what the rules say now.

And yes, I'm sure Olive Nicholls will be more popular with the ruling body than Guest ever was.
Perhaps different rules apply in hunter chases. I don't know.
I'm sure there have been many instances in hunter chases over the years of trainers having more than one horse in the race, and riding one of them. There was a memorable one in the 1970s, when John Thorne ran a brother and sister (both out of Air Wedding), that he bred, owned, and trained, and rode one of them, in a hunter chase at Worcester. They dead-heated, with Philip Hobbs riding the other one.

An article in the RP quoting the rule about her riding, seems to be the case that it is Hunter Chases and being a permit holder that allows her to ride.
