Any historians regarding the derby

Must have done in the years/decades/centuries before Coolmore/Sangster/Vincent O'B started rushing Derby-winners off to stud.

The first derby I remember was the minstrel Robert sangsters as you say packed of to stud after I think the king George.

St Amant - 1904 Derby (and 2000 Guineas).  There are probably others

1906: five-year-old season - St. Amant returned as a five-year-old but failed to win in four starts. His best effort in four races came when he finished third to Pretty Polly in the Coronation Cup.[29] He also finished third in the Princess of Wales's Stakes at Newmarket on 5 July.[30]

I'm sure there are others but I came across Bloomsbury who won the 1839 Derby and DID race in the Gold Cup as a five year old.

Loads of them in the 19th century, I gave up counting at 8
