I think the actual weight of big horses pushes them further into the turf and makes it harder work for them, whereas a lighter horse seems to skip through it, like a hovercraft!

Phil Bull had that idea. Narrow types that didn't sink in. I would guess that's not always the case if the horse also has small feet.
