the perfect roast tatties !

cut the potato's dont use the hole baby ones as they aint soft around edges like
boil them for 3-4 min just to soften the edges ,
meanwhile have the baking tray heating in the oven with a thin spead off goose fat
dont make it to much just under a mm
as the potato's have done 3-4 min , take the tray out with oven gloves
hers the trick, place the baking tray with a fine hot spread off goose fat un top off the burner on the cooker using tongs place the pots in the tray , turning until they go golden brown
then turning them sprinckle plain flower over them still in the tray both sides turning them over so they have a nice sprinkling all over , the place back in the oven ! at this point their should be very little goose fat in the tray a smear , put in until golden crispy , they are gorge crispy on outside soft in middle perfect thats 14 dif tries i had taking tips of people this is the best by a mile !  yum yum !
