Watching Racehorses by Australian Geoffrey Hutson was one I bought a few years ago, it's still available online from High Stakes Bookshop. Whether it's an aid to punting is up to the individual but I found it a decent read, unlike many betting related books which I find a chore to complete and mostly useless.

I have a VHS tape"Conformation Evaluation" by Dr Dewitt Owen which covers everything, although you might not have the time at the races to assess horses.

Books on paddock watching will tell you very little unless you paddock watch regularly IMO
It's like operating a machine at work, you've got to work on it day-in-day-out to be able to tell whether it's on a good day or a bad day. A book won't tell you these things, you need to gain the experience.
A-tenner-a-book will be more worthwile going to a Point-to-Point and watching donkeys walk round the paddock and then go to Royal Ascot and do the same. You WILL tell the difference.
But other than that, unless you paddock watch constantly then a book will tell you no more than the betting market will.
