Am I right in thinking that if he got the call that his wife had gone into labour during the first round and he left the course (and not all players had tee'd off), any win bets placed on him before the tournament started would be declared void but if he left the course once all the players had tee'd off, you'd lose your money?

yes, settled a loser like any player who withdraws for any reason after teeing-off.
