I would like to have a go doing some analysis with Betfair data but find it a bit confusing. So what does the data actually show - for example would I find price for Correct Score 1-1 for each minute of match x vs y

Pretty much. The 1-minute data is free (they charge for the 1-second and every-tick data) so why not just download the Football data and have a play with it?
