If you have part used screw top jars, and may not be using again for a good while, store in fridge, upside down (the jar that is, not the fridge), and it will keep for a very long time....
Something I do all the time, and I just dug out a jar of "Red Pesto" that has been there, from when I was still in short trousers, and it is perfetto!
There is oxygen in the jar so the stuff in it will still deteriorate ....the speed dependent on the type of preservatives within it.

Yes, you would think so but, from previous experience, things go mouldy normally, albeit that all has been done is to have moved the air from top to bottom!

Where else could you get a thread .on the deteriation of red presto in a screw on top jar turned upside down in a fridge . Turning the jar upside down may only mean that when you turn it back the right way, you can't see the mould which will now be at the bottom of the jar.

Can't think of any reason at all why this would help. As said above once air gets in ....
I'll give you one tip though that might come in useful. In fact TWO, it's BOGOF JC tip day. 1. If you've something that you don't want to go off and it's crushable, like a plastic bottle thing, crush all the air out of it then seal the cap on to minimise how much air is inside to react with the "stuff". I suppose you could achieve similar by transferring a half empty jar into a small full jar or container. 2. Those plastic milk cartons, once opened, if you have to put them on their side, will always tend to leak no matter how much you tighten them. If you keep the circular plastic/foil bit that goes over the top and put it back IN the lid (which is designed to have it), it can help act as a sort of washer again and fill the gap it originally was in and seal it up better when you tighten it. Maybe not guaranteed but you've far more chance of success.

I was reading a book on planning and it said to regularly prioritise things into A,B,C with A is needs done now and C is least important.. Then just throw away C ;)
