Assuming you mean the piece at either end. My Gran used to call this the scrag end - just like neck of lamb. The rest of the outside is simply crust and absolutely must always be eaten by one's grandchildren. for which toasting, buttering and a dippy egg is the main aid.

Really good idea to sell healie only loaves, and you could also sell zero healie loaves for those who dislike them. Alternatively, in these times of austerity, you could go the whole hog and sell bread by the slice.
Taking it one step further, you could sell bread by the slice, you could even put butter on it. The more affluent in society may opt to buy two such slices.
The filthy rich may even request some form of filling between the bread.
