Gluten is a name for the proteins found in the wheatgerm of cereals. It's what makes dough stretchy. The more of it in the flour, the better the texture of the bread.

My mum has to have GF because of celiac. She doesn't like any of the bread that is pre-made so she uses GF flour to make her own rolls etc. Not cheap though

I'm gluten intolerant and can confirm gluten free bread is generally rank (and expensive). I don't eat it. Gluten free biscuits are ok as are gluten free sausage rolls and gluten free crumble. Gluten free pasta is passable although don't eat that either. I'm only mildly intolerant so just cut down. If I'm making the effort to avoid gluten (it's in most processed foods) I generally eat healthier, (you end up eating more fruit and veg, fish/chicken without batter etc and baked/new potatoes rather than chips, but it is prolly 50% more expensive.

My son was in a rush one morning and mixed the girls lunch boxes up. Poor think had to be picked up from school and was vomiting for around 8 hours until it was out of her system. He still hasn't forgiven himself.
