The Falkirk Wheel is a rotating boat lift in central Scotland, connecting the Forth and Clyde Canal with the Union Canal. The lift is named after Falkirk, the town in which it is located and is the only lift of this type in the world.
Was there a few years ago, quite a sight and site.

Llangollen canal. Going over Ponticysylithe Viaduct is an experience.
Did that as a kid with my family. If you get the weather you can't beat a boating holiday. Plenty of pubs along the way

One of the best holidays of my life was spent on the Canal du Midi in southern France last year, from Toulouse to Narbonne. Spectacular scenery, and you get to spend some time in some beautiful French towns and villages.

A book I can highly recommend is Narrow Dog to Carcassonne by Terry Darlington. Terry, his wife, and their dog took their Narrowboat across the English Channel (scary) and down through France to Carcassonne.
It's brilliant and very funny. I wonder if Terry is still alive I will try and find out.

London should be added to the list. I've never done it myself but used to work next to the canal at King's Cross and there were quite a few boats using it since the canals were cleaned up.
