ericster - what do you mean 'you used to be a coeliac'? If you're a coeliac, you are born with it and you have it for life, but keep well by sticking to a strict gluten free diet. That's what the specialist said to me at the end of my 2.5 weeks in hospital back in 1997. I'm VERY susceptible to even the slightest trace of gluten in food/drink, so obviously I have to be very careful when eating, but as you say, the labeling on food these days is far better than it was 20 years ago.
boni,
Quite a few years ago now after a weekend of those god awful gut-pains, having suffered since my mid-teens with intermittent bouts of it and being diagnosed with all sorts of gut disorders, my doctor finally sent me for one of those camera down the neck and into the gut gigs.
Well, the outcome was, that I diagnosed a coelic. You know the routine, reading the lists of ingredients on the labels every food container making sure it didn't contain wheat. I was even told by the resident dietician to have my own slab of butter at home so as to avoid cross-contamination. I followed those orders to the letter for something like 5/6 years.
Have you ever eaten something with no reaction only to realise afterwards that you shouldn't eaten it?
And yes, I know that no two coeliacs are the same and intolerances vary.
Well? Anyway.
I read an article in the Daily Mail, the upshot being that often people simply cannot tolerate what most people regard as regular wheat based bread. It's made from stronger flour than most other bakes. That made me wonder, about my condition. Was I simply intolerant to bread?
I went a little bit crazy for a while, like a kid let loose in a sweet shop. Cakes, biscuits, processed foods, anything and everything, and guess what. The only thing I DID NOT TRY was bread. No problem. The only thing I cannot eat is one of the big brands of crisps, can't remember which one, and it actually says on the back of the bag " okay for gluten-free".
I've often wonder if I could or should have taken legal action against my local health authority.
But I'm just so grateful to be rid of those gut-pains. That weekend, so long ago now, I sat up in bed all night thinking my gut were about to burst open. I really thought I was going to die.
Life eh?
