Why use steel cut oats Hank?
I always use rolled oats for porridge since they cook quicker. 3 minutes in the microwave equals yummy breakfast.

I am not a nutritionist foinavon but I believe the steel cut ones take longer to absorb in the body and therefore you don't get the carb spike.
