Is it better to let them fester a bit?  I mean, the stinkier they are the grrrrrrrreater they taste.

French Brie's no bad but I prefer Hilton Stilton .

Thanks hector but I was thinking more along the lines of the Tesco "Yuans" stinkin' my fridge out.

If you like stinky soft cheese, save yourself some trouble and buy Pont-l'Évêque instead of Brie  or Camembert.
