If it's a normal trap, use a chink of Twix. If the bait pad has a little spike push the toffee bit on top on  it and the mouse really has to have at yank at it.

Simply take a piece of wood, a wedge, and a razor blade.
Fasten the razor blade to the thick end of the wedge and stick it to the wood.

Place the wood by the mouse hole and observe.

The mouse comes out of his hole, walks up the wedge, puts his head over the razor blade, shakes his head from side to side looking for the cheese saying ''where's the f'ckin' cheese'' and cuts his own throat.

We don't get house-mice here, but the long-tailed field mice are a serious problem. I use multiple "The Nipper" traps, baited liberally with Peanut Butter.  Foolproof hereHappy

Long story short, i work for living. At one of my workplaces i found 3 field mice living in something i was going to use.

We left it, one of the mice scarped but the other 2 just looked at us with their gorgeous brown eyes and wide bottoms. Anyway i dropped cheese and bred into the den, next day the bread was still there.

play with it, while it runs around scared shitless, then chew its leg, play with it bit more, bite its head off and then carry it home and dump it on your step

Chocolate or peanut butter. The humane traps do work in my experience.

Btw, mice have the ability to collapse theur skeletons and can squeeze through a hole the diameter of a pencil.

Yes chocolate and cheese very good,  but not any chocolate, use dark chocolate.

Yes they'll take chocolate, but they'll be throwing themselves on the traps to get at it if you put a bit of bacon down for them.
