Gently fry the onions, in a saucepan (in a little olive oil) add 1pt of stock.
add the chopped (quite small) swede. If you have any herbs (mixed herbs perhaps) add these (only a sprinking). Bring to boil, then simmer. Have got any barley OR lentils (non-soak type) if so, add these and simmer for 1/2 an hour or so? At this point I would add (if you have any) a medium potato - obv peeled, and cut into small cubes. 20 mins later.... serve (no need to blend or whizz 1st) I wouldn't bother with the tomatoes myself and I'd keep the keep the cabbage and just eat it raw to take the taste of the soup/broth away if it's yuk. |

Personally I would ditch the swede and the carrots. If the soup is intended for one ,rather than a dinner party, stick to 1/4 stock cube and add some lemon juice and pepper as natural taste enhancers.
You may need the carrot tomorrow. |
