Found it, in the camera app hit the menu (3 dots) -> Picture settings -> Scenes -> Pets -> Cats -> Marmalade -> Untick the "Gingerize" box.

This might only be on the HTC One (no S) though.

Have you considered swapping the marmalade for jam ?

It's more than likely the contrast will work quite a bit better in my opinion
