Why when it's defrosted is it not soggy?

because when you freeze dry food it comes out dry.

when you freeze wet food it comes out wet

bread is dry.

If you defrost it to the 100 Celcius or so that it was when it was liquid, it would be liquid again. If you defrost it to the 20C or so it was (when it was like jelly in cubes in a packet), it would be like jelly.
