no idea why people have their steak cooked rare. it is horrible like that imo.
do people have rare steak just to look sophisticated and gay, or do they really like it that way.

sometimes when i am preparing rest of meal to go with fillet steak i end up chopping little bits off the steak and snacking on it and so only half a fillet steak ever sees the pan for a very quick browning each side.
but today I am doing a pot roast pheasant. few splashes of oil and sear/fry the pheasant on all sides for 10 minutes. take pheasant out. onions carrots and parsnip and a few cloves of garlic in the pot for 10 minutes.
then put pheasant back on top, top up with boling water and a bit of salt pepper and soy sauce. put covered pot in oven at 100 for an hour.
the proper recipe suggests cream and wine and chicken stock but haven't got any of that so am making do with whatever else i have

always used to have steak medium, but the missus cooked it rare one night and since then wont have it cooked any other way. Lovely stuff.
Used be a gaffer in a pub in Brum famed for its steaks that used to be really hacked off if you ordered it well done. He said you might as well order a burger.

in summary, i am not much of a steak person i fear. If I am going to eat beef here is my preference:
1. stewed in big chunks with veg and/or kidney 2. minced in cottage pie/bolognese/chilli etc 3. steak 4. roast

gonna make a big fk off chilli stew later usin minced beef, onions, potatoes, carrots and swede. one big pot, will have it for dinner and breakfast for next 3 days.

We had a shoulder of lamb last night with parsnips, roast potatoes and leeks. Quite nice but slightyl underdone I think because I opened the overn sereral times to turn over the veg. No sign of any lunch so far today but a fish pie is scheduled for this evening,
