The basic strategy charts you see on the internet do you use these all the way through the hand?

For instance I get dealt a 7 and a 5 against against a dealers 7. If I hit according to the chart and get a 2 putting me up to 14 do I then go down the list and see what 14 should do against a 7 and so hit again?

Anyone make money from card counting on internet Casinos? Surely they randomise it to make it impossible.
