If you consistently make a book of 105% laying pretty much every runner will you eventually finish in front?.
Basically laying every runner but not evenly.Well backed horses get way more bets than some others, Will that 5% matter will it hold up on betfair?

No you will lose. I don't know whether betfair still seed the horse race markets: they used to seed both sides a couple of slots behind the action but were always on a hiding to nothing.
