Maybe, I know he's far from the only one to say it, I just find it quite condescending towards the interviewer.

We can agree to differ but I do not think he uses in that sense at all.  It is often used in the same way you and I would start a sentence with "look".  It is not correct but it ain't wrong!!!!

It's rude and the height of bad manners.

If someone was not paying attention when you were trying to tell them something, then it might be reasonable to say it, but to say it to an adult who has just asked you a question, is idiotic.

But racing folk have been saying it in interviews for so long now that it has become acceptable to the likes of blackbarn.

I firmly believe that Aiden does not use the word "Listen" in the way you describe it OR with the intention you describe.

A famous Lennon & McCartney song from the 1960s, but I suppose that would be acceptable in the sense that the person telling the secret wants to quickly grab someone's attention before another person arrives and hears too, or else it wouldn't be a secret for long, would it?

I'd imagine when blackbarn was a little boy in short trousers, if he had started a sentence with 'Listen' to his parents or English teacher, for example, he would have received a clip round the earlug, and quite right too.

I was speaking generally, I mentioned no names, so why are you trying to personalize it, you little little twisty thing?

But to clarify, generally speaking, if someone says "listen" to someone who clearly IS listening, then yes, I would regard that as rude, the height of bad manners and idiotic.

And the other problem with it, the person saying it, is in effect issuing an order.
