Bookies don't lay at a 100% market

Definitely not,the "lay all" button just allows you to display all the participants in an event with one press of the button. I use it save time when laying in running.

If what you want to achieve is laying the market for a flat book (when you say "adjust my stakes") - you do know you can use the payout/liability buttons to do that for you? |

Longbridge is absolutely right but you will need to lay shorter prices to make a profit. Personally I would try and pick a couple of losers and lay them instead of trying to make and execute a "book" on Betfair.
