If I click the lay all option on here and adjust my stakes is that basically doing the same as the bookie does? thanks for any advice.

Definitely not,the "lay all" button just allows you to display all the participants in an event with one press of the button. I use it save time when laying in running.

If what you want to achieve is laying the market for a flat book (when you say "adjust my stakes") - you do know you can use the payout/liability buttons to do that for you?

its quite handy in a bust finish when 2 or more will go odds on several times

Longbridge is absolutely right but you will need to lay shorter prices to make a profit. Personally I would try and pick a couple of losers and lay them instead of trying to make and execute a "book" on Betfair.

yes. laying a couple of losers is a good strategy.
