On a Punto-Banco game what is the probabilty of winning 50 units on a game
where say 250 hands were dealt? (probable score 138 bank / 24 tie / 88 player wins)

For arguments sake let's assume that the player is playing the bank every time
at level stakes with a house edge of 1.06%.

Any ideas?

Its an immaterial probability - "unlikely" things happen all the time because there are many attempts at these unlikely things, so obviously some of them are going to happen.

If you sit down with 10 bets and decide to play until you lose the ten or win 50, you will do this about 8% of the time (assuming a .4938 probability of winning).  The average length of this game would be 409 coups.

I have heard that the players in question may have been 'edge sorting' which is
technically not cheating, but taking advantage of non-perfect playing cards.

you can't touch the cards in punto banco and the player has no decisions so can't see that this is correct

It goes to show that if you're going to beat the casino, you shouldn't be greedy and just take enough so that they don't get too suspicious and you get paid on the day
