is it possible to place a trade in advance so you can let it run with fixed exit points?

for example, if i back a player at 1.80, can i also place 2 more bets (eg a lay at 1.20 and another lay at 2.50) so that i take profit if the odds go down, but also have a stop loss so i dont lose all my stake?

Only by using an API such as Gruss.

Not possible with the standard Betfair platform as the player could go down to 1.20 but also in the same match go up to 2.50.
(Seems to happen a lot in Women's tennis).

Gruss, Geeks Toy etc allow you to place a stop loss.
