General Betting

Like when the odds change as a goal is scored the cash out option disapears and is not seen again, why is this?

from my experience it disappears when the price moves against you. i.e. it wont let you cash out when the price moves in the "wrong" direction. Not that I am a cash out person, but I wouldn't dream of using it for my more serious betting, as it appears to be flawed to me.
