if we gamble using an iphone website can bookies leave spyware on this to try to identify us?
do we have the same ip address every time we go online on our iphone?

you should be able to tell safari to block all incoming cookies. however, this will prevent you from using a lot of websites. a compromise might be to have it tell you when it gets a cookie and you can decide if you want it. eg you probably want to accept the betfair login cookie but you might want to avoid some ad tracking cookie.
