Which one is the more difficult to get right

Both sides to score depends on percieved superiority and total goal expectancy in the match. Two evenly matched sides with below average goals could be as low as 1.70 both sides to score, whereas if you have, say a 1.50 chance playing a lesser side it could be about 2.35 .
Over/unders is really just about total goal expectancy although the shorter the favourites, the more likely 'overs'.
It's hard to be precise without actual examples, but roughly speaking 'both sides to score' and 'unders' seem to be in tandem. Hope that makes sense.

tonights leeds game as an example, both sides to score at 4/5, or over 2.5 at 11/10 no tax deducted, which one is mathematically more likely

I had those two bets at 1.90 and 2.10 respectively, so the shorter price would seem to be the more likely.

Surely its both sides to score as you only need 2 goals and you need 3 for overs ?? a game can end 5-1 and both bets win, ends 1-1 and your screwed. 1-1 happens 1 in every 5 or 6 matches if the odds are to be believed - so if you stick to overs, once in every 5 or 6 games your gona be livid !! and if 2-0 both bets lose

It depends on who is playing who. ManU v Pompey would have ''overs'' a lot shorter than '''both sides to score'' whereas perhaps Sunderland v Birmingham, for example, would be the other way round.
The two bets are quite different.
