Does anyone know whether paying beneath the national minimum wage is acceptable, if a job pays bonuses and or commission?

yes.. car sales

basic wage is below minimum but quite easy to earn 40k

self employed posistion do not have to pay anything.

its not legal to employ people at a fixed place of work(more than 6 weeks) as selfemployed.

exceptions are CIS scheme, fishing industry
