In a back and lay situation what is the most popular and efficient method. Do you green up all round for a regular small profit or green up to zero on the rest of the field for a bigger return on your selection

If you're £0,£0,£30 and your 30 is a 2/1 shot, then you're effectively betting £10 at 2/1 and paying commission as you could be £10/£10/£10.

If it is not correct to stake £10 at 2/1 in this situation, then you should be level.

Not sure I get this though. The commission will surely be the same percentage wise. ie £1.50 on the £30 and £0.50 on the £10 returns

The £10 is effectively a free bet being the difference between the back and lay odds that you've acheived and bearing no relation to one's original stake
