When I see exchange black jack. here is what I see
(Back) 2.07/$1101   (Lay)  2.09/$1091

Since I can click and bet the back odds at 2.07. Does that mean that someone or many already offer lay at 2.07 for $1101 which is unmatch bet. is that right??.. who is offering that Lay amount of $1101 once the game start and the number are already there....

Does that mean system auto place the amount when nobody start to offer the odd yet.

can anyone help explain?

Historically, there were very fast bots operated by 3rd parties that possessed their own game algorithms and could place money in the markets at appropriate prices before anyone else.

Now Betfair run some or all of these market-making bots, so in many, or perhaps all cases you are matching the house's own money.

Winning? I think you mean losing.

definitely losing, odds at 1.08 to me should mean that it should win 11 1/2 times out of 12 1/2 hands, i backed 4 1.08's in a row and lost 3 out of 4
1.02's are worse, they theoretically should win 49 times out of 50, i backed 5 1.02's and won twice,
do the odds mean something differant than real odds, when on betfair?
