Who creates the orginal market for each race -I'm assuming Betfair?

In the FAQs Betfair say's that it's not making the market.

Anyone else tried this yet? The ability to back and lay is interesting, as is the form proposition, lots of data available for analysis if you're really into it.

I was surprised to see this in the Sports menu as opposed to Exchange Games.

virtual racing is the same as online casinos which is same as FBOTS, they know where your money is placed in advance then land the ball/ winner in the worst place. Random number theory is laughable, try it and see how random it is lol

Can I use a betting strategy to profit?

Yes. Unlike other virtual racing products, this is an exchange product. Customers can back-and-lay, review the form and use their judgement to develop profitable betting strategies.

Keep in mind that while it is possible to develop strategies that give more accurate odds than the forecast prices, it is very difficult (if at all possible) to develop a strategy that gives you true odds. So like any good sports betting market, generating a long-term profit is a matter of using your skill and judgment.

If you can't make a profit from normal horse racing I doubt you will from this. The skills need to beat the estimated odds are the same, although the competition is less.
