Cut out the middlemen, Eli
![]() https://www.bbcgoodfood.com/recipes/crispy-duck-pancakes Pancakes While the sauce is cooking, put the flour, 125ml boiling water and a pinch of salt in a bowl and mix together until it forms a dough. When cool enough to handle, knead for 5-10 mins. Divide it into 10 little balls and roll each one out as thin as you can. Brush a frying pan with the oil and cook each pancake over a medium heat for 20 secs each side or until cooked but not browned. |

I think one must not confuse the Chinese here earning a living who'd be from Hong Kong and South East Asia countries and the present government of China who are tyrannical and autocratic. On the other hand the Chinese here are hard working, quiet and unassuming and merely earning a living and non-political. Otherwise, they'd be likely to be in China given the country's prosperity and wealth.

hoisin sauce
I've been calling it Plum sauce (for ever) Just googled it and I'm even more confused.. ![]() |

There are two types of Hoisin sauces - a lighter colour (hoisin and plum sauce) and a darker one (hoisin only). And, either can be used for crispy duck and pancake. Personally, I'd prefer the lighter one for marinading duck breasts before frying like a piece of steak; the darker one is ideal for marinading chicken thighs - it produces a much crispier and sweeter skin. But, both are tasty.
