had the waitrose ones yesterday with the crispy duck, but i want to buy the duck legs from butcher next time, but what are those thin pancakes called and where can i buy them ?

I have 2 packs of roughly 12 pancakes in the freezer,they are from m and s and i will post em to you royal mail signed for services if u r in the uk.

Pancakes
While the sauce is cooking, put the flour, 125ml boiling water and a pinch of salt in a bowl and mix together until it forms a dough. When cool enough to handle, knead for 5-10 mins. Divide it into 10 little balls and roll each one out as thin as you can. Brush a frying pan with the oil and cook each pancake over a medium heat for 20 secs each side or until cooked but not browned.

if you can find one open you can get packs of 100s and the jars of hoisin sauce for coppers at any chinese wholesaler/supermarket.

I think one must not confuse the Chinese here earning a living who'd be from Hong Kong and South East Asia countries and the present government of China who are tyrannical and autocratic. On the other hand the Chinese here are hard working, quiet and unassuming and merely earning a living and non-political. Otherwise, they'd be likely to be in China given the country's prosperity and wealth.

I've been calling it Plum sauce (for ever) Confused

There are two types of Hoisin sauces - a lighter colour (hoisin and plum sauce) and a darker one (hoisin only). And, either can be used for crispy duck and pancake. Personally, I'd prefer the lighter one for marinading duck breasts before frying like a piece of steak; the darker one is ideal for marinading chicken thighs - it produces a much crispier and sweeter skin. But, both are tasty.
