Buy a big green egg or other Kamado. You will never cook meat indoors again. Expensive but will last you 25 years and meat is amazing. Not well known about in these parts, a 3,000 year old Japanese cooking system. Use a thermometer to measure 'doneness'. Doneness isn't just a colour it's a temperature.
