My butcher does 4/5 varieties of Pork Sausage, 2 Beef, 2 Venison (1 with Juniper) and one Wild Boar. He does Lamb Burgers but not Lamb Sausages. He doesn't do Chicken Sausages I'll ask him why.

there are number of reasons i suppose.
firstly chicken doesn't have enough fat. secondly they are mostly eaten by people who don't eat pork so they have nothing to compare them to so they can be utterly disgusting and most people are none the wiser. no reason why they couldn't be nice though. right herbs, mix in some schmaltz or duck fat. chicken ballotines or little chicken patties are perfectly ok. |

Even having posted what I posted, I think DStyle is probably correct, particularly about lack of fat.
I would take Thighs only (bone-in skin-on), giblets (heart and liver) from a whole chicken, plus about half of that little lump of fat you normally strip out before roasting, De-bone and dice, mix with a few breadcrumbs and mixed herbs and then sausage. I might even try it. |

Good point about the lack of fat Dstyle and the Muslim angle. Pork's the best value protein around. Poor chaps don't know what they are missing.

Chicken sausages were regularly on the breakfast menu in Turkey. As no others are available I gave them a try once. Truly awful and inedible but as has been said the locals have nothing to compare them to and were probably only there to hopefully satisfy the Brits.

Pigs and Chickens. Possibly the most abused and badly treated creatures in factory farming. Particularly sad for the pigs, as they are such intelligent animals. Most people couldn't give a fk. Makes me furious.
