The answer is to stamp out the unhygienic and illegal practices. If people are changing the kill dates and allowing chicken to fall on the floor and be put back on the conveyor, then it doesn't matter how good the quality of the meat which arrives at the plant might be.

Aye, we'll see how concerned the Guardianista types are about our own bad practice. I doubt they'll be as vociferous for as long as they were about US chicken hygiene.
