Was working on Isle of Man a few years ago, and first morning at the hotel for breakfast, I decided to have kippers, as IOM is famous for it's kippers. The waiter asked me if I wanted them Manx style, or 'the way we eat them here' Ok I said, I'll give them a try. He brought them to me, and it was a couple of fillets on toast.... covered in marmalade, and then grilled. They were delicious! Only ever tried them like that once at home, and somehow they weren't the same.

Fortunes kippers from Whitby are the best in the world. Bought 2 pairs last Saturday.
Kippers have to be grilled imo and they do stink a bit. Always share them with the dog he loves 'em.
