It was all raw and why she cooked the spuds and carrots the longest. I'll give it a try later, I have all those spices and ingredients except coconut cream but I'll go by her method.
I'm a meat eater but love my veggies, I bought a mixed bag in Tesco yesterday (carrot, turnip, onion, leak) so it's good timing. Thanks for the link.

I made it but found the heat very tame. I'm not a heat lover BTW but I added some chilli oil which gave the required kick. I also used a full tin of tomatoes. I covered it with foil and let it simmer for 10 minutes but the veg still have some crunch to them. I added parsnips 5 minutes after potatoes but I should have added them at the same time. Parsnips usually go to mush if cooked too long but instead I never cooked them long enough.
It's pretty nice, I'll serve it with some pork chops later.

Might be stating the obvious but, what is mega important is to add spices and herbs, and particularly chilies, a little at a time and taste, taste, taste.
What CAN go wrong? lol
What can easily go wrong is treating it too casually, and trying to do other stuff at the same time. If you must leave it, always set the timer.

Keep topping it with more oil as the heat just seems to go on and on.
I have a bottle that is many years old but, admittedly, I do keep adding a chilli or two.

Chilli oil is great. Keep it for as long as you like. Nothing can live in it. Adds a kick to everything and you know, gut-wise, exactly where each meal is/was inside of you. And chillis, in moderation, extend life-spans.

It was really bad. Ironically I had the flu jab for the very first time recently but, apparently, it was only 3% effective. They picked the wrong strains but given the time it takes to make up the mixture they only get one shot at it. I'm amazed it didn't kill my mother but I suspect previous flu-jab mixtures covered some of it.
Anyway, now I'm peachey. And I hope you are too - or soon.

eep in the shady sadness of a vale Far sunken from the healthy breath of morn, Far from the fiery noon, and eve's one star, Sat gray-hair'd Saturn, quiet as a stone, Still as the silence round about his lair; Forest on forest hung about his head Like cloud on cloud. No stir of air was there, Not so much life as on a summer's day Robs not one light seed from the feather'd grass, But where the dead leaf fell, there did it rest. A stream went voiceless by, still deadened more By reason of his fallen divinity Spreading a shade: the Naiad 'mid her reeds Press'd her cold finger closer to her lips.
