Dead easy
Cure ingredients; 2Kg. Salt,4tablespoons ground black pepper,250gm brown sugar. Method; Mix ingredients together and rub in to pork.Rub in really well and try to completely fill every crevice for best results. When finished, put the pieces in a sealable box(I use a big cool box) and put it somewhere cool(I use the garage). Every day, take the pork out and rub in some more cure mix. You'll find that liquid is coming out of the pork so empty it out of the box, clean the box and put the pork back in.I do mine for six days(you can adjust) then you take it out soak in water for a couple of hours, empty water out, put in fresh and leave for a further two hours. Then I dry it off and hang it in the garage for a couple of days.Sorted.You'll find the longer you cure it the saltier it will be, so adjust for taste.Last summer I tried some with honey in the cure and that worked quite well. |
