Believe it or not, I have never tasted a parsnip. My mother never used them, so neither have I. I see them in the local Co-op and they look a bit like a misshapen swede. What exactly do you do with them and are they worth bothering about?

roast them from raw - then brush a bit of maple syrup on them 15 minutes before dishing them up.

One of my greatest regrets in life was not discovering parsnips until I was 36.
Just had them roasted as part of my Sunday dinner.

Add them to soups and stews near the end of the cooking time, to avoid them going mushy

I've always peeled mine butnothing to stop them being well scrubbed own. Cut them into similar sized (largish) chunks.

Carrot and Parsnip mash is a staple, can't believe you've never tried it :)

Turnip and Parsnip is another combination (you can also add carrot)

i love my veg, bu not keen on parsnips - too sweet imo.

Roasting prob the best, peel them, no need to parboil, chuck them in withthe roasting spuds with about 40 mins to go.

in a restaurant once I had parsnip shavings with sea bass. They'd basically cut slithers of parsnip and deep fried them until slightly crisp. Very nice.

I've just discovered beetroot after growing my own this year. I've only ever eaten it pickled before but its really easy and quick to grow and beautifully sweet when boiled.

Very under rated like parsnips.

leeks is another one of my favs also.
a roast dinner for me is a must with both leeks and parsnips.

I've made Leek and potato soup,**-a-leekie soup and just plain boiled leeks, looking for some inspiration.

I've sprouts, cabbage, beetroot and carrots for xmas day. Regret not growing parsnips but its my first season and I'll have them in for next year.
