I am just about to have some beef olives. Never had them before, but my scottish mate kept going on about them, so I have caved and bought some.

Beef Olives: Put them in a shallowish oven dish, add some red wine, a cup of beef stock (from a cube is fine) and cut an onion into 4 - put that in too. cook at about 180 for 30-40 mins,uncovered. Much of the liquid will have reduced.
While it's cooking (after about 10 mins or so), peel and cut small some potatoes, and cut them small, boil (simmer bubblingly) for 16 or 17 mins, drain, return to a low heat, then add a splash of Milk, an ounce of butter, a little pepper, and mash well.
Serve, pouring the beef olive/wine/stock gravy over the lot (discarding the onion 1st).
I have this with green beans.

Pork Belly done well is a real treat. IF you have had too much ale I suggest a good bacon and egg sarnie. I shall now start cooking my £1.49 frozen beef stew & dumplings. My cupboard is as bare as Jordan's fun bags :(
