I'm off to shoot some rabbits next week. It's one of my fav meats to eat but only have it rarely.

I wondered if any chit chat chefs have any recipes that they swear by?

I've done them in a mustard sauce (french recipe) before but am looking for new ideas.

Yep, but blend a spoonful of flour into the juices after browning and removing the meat. Cook for two and half hours, adding the shallots after one and a half; something like that.

Rabbit Pie...marinade- 225ml.white wine,50ml.cooking oil,2 garlic cloves,1/2 lemon rind(grate),tblsp.chopped parsley.Mix and marinade rabbit for 6 hrs.Room temp...Remove meat and dry.Strain marinade.
Roll Rabbit in seasoned flour and brown in pan.Add the marinade,300ml. chicken stock,125gm.cooked bacon,2 chopped carrots,2chopped onions,seasoning.
Simmer for approx 2hrs.Place in pie dish and leave until cold.Then cover with shortcrust pastry, place in oven(190) until brown.Enjoy :D

Ever tried Somerset Rabbit?

1 Rabbit
2 Tablespoons Flour seasoned with salt and pepper
2oz Lard or oil
1 Onion chopped
1lb Mixed root vegetables, scrubbed and cut into chunks
1 Tablespoon tomato puree
1 Teaspoon Yeast extract, such as Marmite
1/2 Teaspoon Mixed herbs
1/2 pint Cider
1/2 pint Chicken stock
Salt and pepper


METHOD:-
Cider drinking rabbit 6Kb

Keep rabbit whole or if it will not fit in casserole, cut in two between hind legs and rib cage and dust over with seasoned flour. Heat lard or oil in a pan and turn rabbit in it until brown. Lift out of fat onto plate.

Fry onion gently to soften. Put rabbit in pan or casserole. Put veg on top and add other ingredients cover with a lid or foil. Either bring to boil and simmer until tender about 1 1/2 hours, or put casserole into a warm oven, gas 3, 325F, 160C, for about 2 hours or until tender. Lift out rabbit, remove all meat from bones and return to pan and re-heat. Serve as a stew with potatoes and green vegetables or with pasta shells.

Serves 4. Goes well under a pie crust or with dumplings. Freezes very well.

Mitchel Downie - i'm not doing it to be a 'brave man'. They are a pest and a family member has a farm. I asked it I could go and shoot some rabbits as they are overun with them. An now I'm looking for different ways to eat them - as opposed to just shooting them for the fun of it. Ok?

I agree with Sib. Cooking it that way is delicious.
Also, the way they cook it in Malta (which I don't know the method of). Rabbit is very popular over there and they sometimes pass it around in bars as 'nibbles'.
Very, very tasty, if anyone knows the recipe?

google for recipe, basically a stew with tomatoe and onion.

secret you will not find (from the grandmother, add 2 tablespoons of sugar, and one of vinegar while stewing)

enjoy with crusty bread and red wine

p.s. wild rabbit meat is amazing!

I love rabbit, I usually just have a stew, throwing in whatever vegetables are available, but I will save some of these racipes.

It's just that I have to have carrots with my rabbit, I don't know why.

Oh, and game pie at this time of year, beautiful.

only one way to eat a rabbit for me...
cut in half around the middle, parboil for 15 mins (?) or so, remove from pan, transfer to roasting tin, oil lightly and place in oven until nicely browned (30-40 mins?). .. and eat it!

similar recipe for salmon..
stuff cavity with finely chopped onions, herbs, garlic, and butter.. seaon and wrap whole fish in a clean teatowel.
place in a medium warm oven for 25 mins, remove from oven, unwrap the fish, throw it in the bin and eat the teatowel. salmon is not one of my favourite fish, btw.

mitchell - I guess that you don't approve, me neither. But as an often falling off the wagon vegetarian that owns a whippet that shows no interest in chasing rabbits it would be nice to hear your objections, for instance is it just the fluffy bunny angle or a bit deeper than that?

5lb of spuds, 3 sick rabbits, dont bother with the gun these mixi rabbits wont be able to run away, grab them by back legs and kneck, pull taught, following this proceedure you may witness said beast shiver / shake, do not worry it is not auditioning as a shakin stevens impersonator on britains got talent, within a few moments the beast will cease to exist, if you are quick you can remove the still beating heart as a snack for your dog, skin,gut, lightly roast,chop into small pieces with gravy made from the roast juice, cover with mash and back in oven for 30 mins, enjoy.
