peel it, core it and thinely slice. sprinkle with sugar and a handful of fresh garden mint finely chopped. leave for 30 mins and enjoy.
saute with butter and brown sugar until slightly brown and add a shot or 2 of dark rum. served with ice-cream or whipped cream. bon appetit

Chop peeled pineapple into rough cubes of about 1 inch
Gently heat 1oz butter in a large saucepan with 4oz demerara sugar for approx 5 minutes
Add cubed pineapple, cook gently with lid on for approx 20 mins until fruit is soft
Pour over mixture a dash of courvoisier, then quickly flambe.
Allow mixture to cool, as it sets transfer onto greaseproof paper and roll, forming a thick cylinder.
Pop in the freezer overnight
Serve by popping it up your poo-chute........

Remember if adding it to Pizza, stir fry or curry, to add it near the end of cooking - or at least cook it quickly. Pineapple can retain its texture but lose all flavour if cooked too much... not very nice.
Also, and this really does work. If you get some fresh Pineapple and it's a bit sharp, and not sweet enough, rub a tiny amount of salt into it before eating. It makes it lovely and sweet..... Nice
