I had a box of 6 double yolkers.Before I had a chance to calculate the odds of this happening someone told me that the doubles are taken to one side and used in the catering industry.So ,if you find that the first egg in a box is a double make sure you have a decent wager on the rest of the box being doubles. No kidney in the pork chop,probably due to the EU or health and safety.What a shame.

it's illegal now to sell a pork chop with the kidney because of the price difference and yes it was an EU directive. My butcher still will though if you ask him and he also sells heart as my dogs have it.

i don't think it's illegal because of the price difference, i think it's something to do with a directive about not allowing meat to be contaminated by offal.
but as was stated an indipendent butcher will still cut you some as long as you don't look like the council food inspector, hardly surprising as the kidney is cheaper than the chop.

The inspector has to remove the suet from the kidney and pull it away from the spine, to inspect it for disease, so the carcass now comes back from the abbatoir with the kidney barely attached. You have to get it separately now,unless you hava local butcher on request.
