i like doing a great big bowl of vegetables and roasting them in rapeseed oil, balsamic vinegar and chilli or peri peri sauce - can last for quite a few meals.

Red, yellow and green peppers, aubergine, courgette, celery or onion, tomato (along the lines of a ratatouille).

You can stick beaten egg in and have a frittata, top off with cheese.

You have have it as an accompaniment to a main meal.

You can have it with cheese on toast.

You can have it with rice or pasta.
